It sounds like you have created pages for the categories in your installation, which isn’t necessary as category archive pages are handled separately on a WordPress site.
However, if you want to create a specific template for a particular category and apply a different design, you can do that via the Site Editor: https://wordpress.com/support/site-editor/.
