See the Editors support page. You may switch between the two modes, Visual and HTML in every post and page editor, as described in the Switching Editors section of the Editors support page.
I’ve never heard of structured data. I suspect that the quote you provided might apply to WordPress.org sites, rather than WordPress.com sites.

Structured data for rich snippets (Schema JSON-LD or microdata) can’t be added to the editor – it’ll be stripped out.
It’d require an upgrade to a Business plan, which would allow you to install plugins that could add the markup.

You don’t really need to add structured data to your company site – that’s really something optional that tends to work best for sites with repeating information, like news articles or recipes.
