Im new to wordpress and in my roaming around figuring things out about how to edit my blog and its theme, I seem to have broken it? I’m not sure how to fix what I have done. Any theme I try to apply will not work/show. Can any one help this newbie?

I see you switched from the Twenty Fifteen theme to Independent Publisher. Are you still needing to switch to another one?
You can browse themes here: https://wordpress.com/themes/
Then when you find one you want to use, click the Activate button at the top to add it to your site.If that gives you any trouble, feel free to pop back in and describe what’s going on and what you’re wanting to do, and we’ll take a look! :)

the issue is when I apply the theme it looks nothing like the demo of it here is what it look to like on my end.

Oh, okay… I know what you mean now. :)
Themes usually have a few setup steps to get yours looking like the demo, and also adding some content will help too so it has some text and things to display.
You can read up on Independent Publisher here: https://theme.wordpress.com/themes/independent-publisher/.
Or if you plan to use Bushwick now, the page for that theme is here: https://wordpress.com/themes/bushwick/.
I would recommend adding a few posts and/or pages (even if they’re just test ones that you delete later) so you can see how the theme changes as you configure it. Then go into Customize and you’ll find lots of things to adjust and try out to get it setup just as you want. :)

Went premium. Was playing around with new themes, but decided I wanted to keep original “Coraline theme”. Now all my widgets, media, etc are gone! How do I get them back? Or are they gone and I have to start over!??

Just a quick note to say you are referring to running an old retired theme that no longer supports all wordpress.COM features when the recommendation is to switch themes.
Coraline was retired in 2015 and replaced with Colinear: https://wordpress.com/themes/colinear
You can run Coraline on the site as you have used it on previously but it no longer supports all WordPress features.Switching themes can be easily done. Themes are just “skins” on WordPress.COM hosted blogs. You can quickly and easily change themes on any WordPress.COM hosted blog to another one found here http://wordpress.com/themes/ and no data will be lost or negatively affected by the change. The only time you may have to do a lot of work is if you are changing to a dramatically different theme with different features and/or if you have done any CSS editing.
Provided you are logged in as Admin under the same username account that registered the blog go to Dashboard > Appearance > Themes, Browse themes until you find one you like and click the “activate” or the “preview” link, or type in the name of the theme you want to use.
The theme customizer https://en.support.wordpress.com/customizer/ provides a preview function for exactly that purpose ie. so you can view what a theme will appear like prior to changing one.
