Just change the the “Default Post Category.”
Each post must have a category. So wp.com sets “uncategorized” as the default category. All you need to to is to change the default to another category you like better:
    dashboard—>settings—>writing settings—>”Default Post Category”—>select a category—>save changes

well, it worked, i picked a different category but here is what happened afterwards (you can see for yourself on my blog http://goreadmydustybooks.wordpress.com
    1) my book category “mystery” disappeared off of the top page option bar.
    2) the word “mystery” is on the right side page with other categories but is separated distinctly from other equally important categories
    3) I tried to go back into the categories menu and start over but the option is not there anymore. The default option is gone. Once I chose a category, it seems I can’t change it…hmmmm

Was “mystery” a category you already had, previously to the issue with the “uncategorized” problem? I cannot remember if it was part of your navigation or not. I think not.

“mystery” is in a category widget on your right sidebar. Title is “Genre.”

The other tabs in your top navigation custom menu link to categories. But because you still have only one post on your blog they link to nothing: there are no posts to link to!

That would also explain why “mystery” is the only item to appear in your right sidebar category widget: you have no posts in other categories therefore there is no logical reason to display the other categories.

The widget (without a title) below that is a custom menu widget with the same category links that have no posts.

Speculation here, but it looks like you are confusing custom menu, custom menu widget, and category widget.

Thanks so much for your patience and help…but the “mystery” category WAS there on the top selection list (top page). It disappeared when I changed from uncategorized to category “mystery”. I just want to go back and put the “mystery” option back on the top of the page list of categories again and call it a day! How can I do this? Thank you again for helping me..

Have you worked through the learn wordpress tutorial? http://learn.wordpress.com/

At the very least, make some dummy posts, one for each category in your custom menu:
    adventure
    romance
    drama
    humor
    uncommon classics
    non-fiction
Assign each dummy post to the category. You can add text painlessly with lorem ipsum http://www.lipsum.com/ to get a visual idea of how they might look.
You’ll see then that your category widget in your right sidebar will show each of your categories.
Here is info about custom menus:
    http://en.support.wordpress.com/menus/
    and the custom menu widget:
    http://en.support.wordpress.com/widgets/custom-menu-widget/
and for good measure, the category widget:

Try editing your custom menu and putting the “mystery” category back into it.

BTW, as a volunteer I cannot see private blogs or posts. So I can see only one post, which is public.
