New categories also auto changing tags?

I recently just fixed up my blog a lot. Since my blog was incredibly disorganized before (mainly the categories), I ended up deleting almost all of my categories and making new ones. I did this through the categories section that is on the left hand side of the dashboard. I then made new categories, and assigned all of my posts to it.
I thought everything went fine (all of my hyperlinks still work), but I noticed that where I had cross over tags and categories, all of my tags have also been changed to my longer, more descriptive categories.
For instance, I used to have a category of Photography, and a tag of photography, now I have a category of “Fine Art Photography {process, reflection and beautiful images}”, and I still want to have just a regular photography tag. Instead, I have that category and a tag of the same name. I have even went into tags, changed the longer one, but that then changes my category back too… No matter which way I do it, both the tag and the category change. It is doing this for a few categories/ tags, and it is a little frustrating.
How can I ensure that changing categories does not change tags? Or vice versa?

Do NOT duplicate tags and categories. The search engines treat tags and categories the same and having duplicates can get you labeled a “tag spammer.” If you have a category called “photography” do not have a tag by the same name.

A “photography” tag and a “photography” category is the same piece of data, so you can’t edit the one without making the other change as well. You need to delete both of them, then re-create “photography” as a tag only and the longer one as a category only.

Okay, that was the idea I was assuming from the sacredpath’s comment (that I would need to delete at least one of them). I was mostly confused because I *did* delete all of my categories (with the exception of two of them, however the two that I didn’t flat out delete are not the ones that were giving me trouble now), and make new ones..
But whatever, I have my categories how I want them, and I deleted any wonky tags. Knowing that wordpress also treats tags and categories the same does help (I did know that SE looked at tags and categories the same, I wasn’t trying to do SEO, I was only trying to make my actual blog easier to move around in and find stuff).
