Delete categories and new dashboard lay out

Hey there,
I’m trying to manage the categories I’ve created, but I made a mistake in the hierarchy so I wanted to delete couple. However, I can’t find the area where to manage, create and delete my categories in the new wordpress dashboard and the help files are based on the old set up.
Where can I find the category-management, and, prefereably, is it possible to switch to the old dashboard lay out? It was a lot more management friendly than the current one.Cheers,

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

2. To edit/delete categories in your dashboard go to Dashboard → Posts → Categories
