Categories — This REALLY shouldn’t be difficult

I’ve just spent most my day trying to post into the specific categories I have added with the widget function. Yet when I create a new post– such as ‘fried rice’ and try and set it to go into my ‘recipe’ category — it won’t even show that I have that category. If I try and ‘add’ as a new category and duplicate it — then ‘fried rice’ appears under ‘all categories –even though I only specified it to go into recipes. I can’t rest til it works!
The blog I need help with is: (visible only to logged in users)

No categories will display in the widget until you create posta and assign categories to them. Until you have done that there is no data for the categories widget to display.
