This is a fabulous and ridiculously easy soup to make. My mom would make this soup when my brother and I were younger but somehow it slipped off the radar! I'm about to send her an email reminding her of all the yummy foods that she hasn't made in awhile....after I'm done posting :)

Ingredients

2 (15 ounce) cans cream-style corn
2 (14 1/2 ounce) cans low sodium chicken broth
3 eggs, beaten (I love whispy eggs in my Chinese soups - use two eggs if you don't LOVE your eggs...)
2 tablespoons cornstarch
1/4 cup water
1 (10 ounce) can corn niblets, drained (optional)
2 tbs chopped cilantro
salt and black pepper

Directions

1. In a saucepan combine the creamed corn and broth; bring to a boil over medium-high heat.

2. In a small bowl or cup whisk the cornstarch and water; add to the simmering corn soup and continue to cook for about 2 minutes or until thickened.

3. Gradually add the beaten eggs while stirring or whisking the soup constantly.

4. Add in the corn niblets (if using) and cilantro and heat though. Season with salt and pepper.

Today is great day with intentional missing of university and I went of with my two Khala, cousins to Abacus restaurant in Bonosri for shortcut fun purpose. Just checking the taste of soup and it's awesome and I am leaving Chinese soup for ever and I will take always Thai Soup. It's cool with Chingri and socces. However, we also took chicken fry and franchise with jal socces.

I finally had my fixed up Fuji Finepix F31 camera delivered to my place this evening! :) And I just had to use it to snap away at my dinner. I was so close to kissing my camera, heh.

A huge bowl of carrot, potato & onion soup in our pressure cooker plus my mum's hand. :)

Prawns and onions in a super spicy sweet and sour sauce. It was my favourite dish tonight.

I have a monster head cold. Where and how did I get it? I am ever so careful whilst out in public not to touch my face at all until I've washed up. How did I manage then to get a cold? However I got it, it's a doozy, as they say. Haven't had one like this for many years. (over 5 years I expect.) Over the past 3 days I've carried my box of tissues with me wherever I went. I've eaten about a gallon of Chinese Chicken and Rice soup. I've drunk liters of tea, soda, coffee, etc. Today at least, I am not constantly blowing my schnoz. That's something I suppose. The brain is still a bit fuzzy though, and I'm more dizzy than normal. At night I take the medicine that tastes like "green death." (to quote Dennis Leary) It helps me sleep and breathe. It's good I don't have to drive any further than work (2 miles) or I could be seen as a menace on the roadways. Tomorrow is another day. Perhaps I will be able to breathe freely without sniffing loudly and grossly. I, and those around me, are looking forward to that!
